Being the anime mod is tough work. I come home and try to watch a few episodes of something after i eat and do homework. So here are some great picks, meh choices, and some series to AVOID AT ALL COSTS.

NO SHIT, SHERLOCK
Outlaw Star
An underrated classic space fighting series. Great solid characters that don't whine, a cool LIVING spaceship with a living female computer, a samurai chick, a crazy cat-girl, and one of the biggest badass characters to ever be invented: Gene Starwind. This not only is action at it's finest, its also harem and sci fi at its finest too.
Cowboy Bebop
Notice that I capitalized the name. Anyway, another concept of space that differs from outlaw star. This series is also amazing on so many levels and Shinichirō Watanabe is able to make the whole black canvas of space as living as possible. Plus the humor and action are top notch, and ends with a bang. Fucking diverse soundtrack.
Samurai Champloo
Shinichirō Watanabe does it again with a mix of hip hop and the classic warriors of Japan. Also included are random encounters with baseball players, brothel operators, crazed woodblock painters, and humorous homosexual foreigners. Crazy ass heavy soundtrack.
Afro Samurai & Afro Samurai Resurrection
Sam "Mothafucka" Jackson in an anime is great. But hand crafted style of swordsmanship and time period (steampunk feudal) make this story of a man trying to avenge his father a winner. Also a great hip hop soundtrack by the RZA.
Inuyasha: The Final Act
Yes, Inuyasha gets a spot here, but this is the good NEW series that grants the wrap up. We skipped like 15 books to get to the end and all chips are down. we got the new black Tessaiga and the Shikon Jewel is almost complete. Plus, Sunrise, who animates gundam made the animation top notch, with an overall darker feel, and eliminates 50% of the melodrama. Plus we get gore and blood now.
Fullmetal Alchemist and Fullmetal Alchemist Brotherhood
The Elric brothers are here too, with their failed revival experiment in tow but this time, Taking TWO paths. The new series is great since it plots all points well with no WTF moments to confuse you, while the old one has the amazing dub. The new series has already surpassed the old one, on story and pacing so hop on the band wagon before season 4 of "brotherhood" starts.
Darker Than Black & Darker Than Black Ryuusei no Gemini
Hei is a badass assassin who has powers that come with a cost. All people who must pay these costs are contractors. This series is built on good characters, complicated back story, and cool powers. The second series that just ended was also good, but nothing beats the original.
D. Gray Man
Probably my favorite series in Shonen Jump. Sure it takes a bit of time to get used to it, and the terms and how the children of Noah want to kill us all, but solid characters and cool weapons and plot twists keep it afloat. BUT DON'T READ THE SPOILERS. It ruins the series. The manga is great even if it is a little rough, but by far it has been enjoyable to read. PLUS WE HAVE A DUDE WITH A GIANT HAMMER AS A WEAPON!!!!
20th Century Boys
When you were young, did you ever dream of saving the world? Well, for a bunch of slightly washed up adults who used to be a gang of rowdy kids now have that situation when their past comes real and tons of people start dying. The live action adaption was great, but the manga is so well told and dark.
Akira
Perfect story of military might, ego, and abused power. With motorcycles and psychics. The series is AMAZING. Both the manga and anime end and tell the story differently, but the ride is enjoyable.
Golgo 13
This classic series is older than your momma. Its like combining James Bond with Jason Bourne and make him Japanese. He smoke, drinks, sexes people, and kills. You are not masculine if you never read this series. EVEN MY DAD has seen this.
Desert Punk
Biggest. Pervert. EVER. Seriously, this guy.....plus he is a bounty hunter, who met his match, another one with big boobs. Nuff said. Also tons of shotgun action.
Fist of the North Star
The manliest man series ever.
Black Lagoon
More rouge action...with a chick as the protagonist. And great gunplay.
Bokurano
Well everyone here knows this series.
Gurren Lagann
Typical mech dystopian future fanservice series. WITH A TWIST ENDING.
Needless
Typical mech dystopian future fanservice series. WITH EVERY POWERED ATTACK THAT IS EPIC ON THE "HOLY SHIT, WHAT IS THAT!!??!?!?!?!" SCALE. PLUS, every episode has enough fanservice to turn gay guys straight.
Toriko
Series about gourmet hunters. People who risk their lives to hunt food that could EAT them. Suprisingly detailed and good fun. And the main character (Toriko) had more muscles than Goku from DBZ.
Ultimo
HOLYSHIT, THE GUY FROM SHAMAN KING AND STAN LEE MADE A MANGA WITH GIANT ROBOTS. That sentence alone should make you read this.
Evangelion
The original angst filled mech series.
